Cookies:
- 2ยพ cups flour
- 1 teaspoon baking soda
- ยฝ teaspoon baking powder
- 1 cup butter, softened
- 1ยผ cups sugar
- 1 egg
- 1 teaspoon vanilla
Lemon Curd Filling:
- 6 Tablespoons butter, softened
- 1 cup sugar
- 4 eggs, divided
- โ cup lemon juice
Topping:
- Zest of 1 lemon
- 2 Tablespoons powdered sugar for garnish

- Prepare the Oven & Muffin Tin
Preheat your oven to 375ยฐF (190ยฐC) and spray a mini muffin tin with nonstick cooking spray. - Make the Cookie Dough
In a small bowl, mix flour, baking soda, and baking powder. In a large bowl, cream butter and sugar until fluffy, then beat in the egg and vanilla. Gradually add the dry ingredients, mixing until fully combined. - Form and Bake
Roll the dough into 1-inch balls and place them in the prepared muffin tin. Bake for 8โ10 minutes, or until golden. While still warm, press down the center of each cookie to create a cup shape. Let them cool. - Prepare the Lemon Curd
In a saucepan, cream together butter and sugar. Add 2 whole eggs, 2 egg yolks, and lemon juice, whisking until smooth. Cook over medium heat, stirring constantly, until thickened (about 5 minutes). Allow it to cool slightly. - Assemble the Cookie Cups
Spoon the lemon curd into the cooled cookie cups. Top with lemon zest and chill until the filling is set. - Garnish and Serve
Carefully remove the cookie cups from the tin, sprinkle with powdered sugar, and serve.
